For the weeks of January 16-31: Crock pot recipes--these books are located at the Petersburg Branch.

Recipe 1: White Chili Specialty (a recipe from Barbara McGinnis of Jupiter, FL, published in Fix It and Forget It Cookbook  (Dawn J. Ranck & Phyllis Pellman, Good Books 2000). Some modifications have been made.

Grocery List: one pound (or two cans) of Great White Northern beans; 2 pounds boneless, skinless chicken breasts;  grapeseed oil; onion; 2-4 1/2 ounce cans chopped chilies; cumin, salt, 1 can chicken broth.

To Prepare: Cut the chicken breasts into bite-sized pieces. Brown them in 1 T. grapeseed oil. Once browned lightly, put the chicken pieces into the crock pot and add the 2 cans of white beans, one medium onion (diced), the 2 cans of chopped chilies, 2 t. cumin, 1/2 t. salt, 1 can chicken broth, and 1 c. water. Cover and cook 10-12 hours on LOW or 5-6 hours on HIGH.

Recipe 2: Beef and Mushroom Hot Pot (a recipe from Sandra Lee Semi-Homemade Slow Cooker Recipes 2, Meredith Books 2007).

Grocery List: 2 pounds beef stew meat; 2-8 ounce package sliced fresh mushrooms; one package of frozen sliced carrots or 1 pound carrots; 1 box Uncle Ben's long-grain and wild rice; 2 cans low sodium beef broth; salt; pepper.

To Prepare: Season the meat with salt and pepper. (The meat is normally already cut into bite-sized pieces--if not, do so now.) Place the meat into the crock pot. Add all other ingredients. If using raw carrots, slice into 1/4' rounds. Cook on LOW for 6-8 hours.

Recipe 3: Caribbean Sweet Potato and Bean Stew (a recipe from Crock Pot--The Original Slow Cooker--Best Loved Slow Cooker Recipes. 2006 Publications, Ltd.)

Grocery List: 2 medium sweet potatoes; one can or one bag of frozen green beans; 1 can black beans, 1 can vegetable broth; 1 onion; Caribbean jerk seasoning; thyme; salt; ground cinnamon; small bag slivered almonds.

To Prepare: Peel and dice the sweet potatoes into bite-sized pieces. Drain the canned beans. Dice the onion into small pieces. Combine all these ingredients into the crockpot along with 2 t. jerk seasoning, 1/2 t. thyme, 1/4 t. salt, and 1/4 t. cinnamon. Cook on LOW for 5-6 hours. To prepare the slivered almonds to add after serving, preheat oven to 350 degrees. Spread the almonds out on a baking sheet and bake 8-10 minutes or until golden brown. STIR FREQUENTLY--THEY BURN EASILY!
